Shredded potato or sweet potato makes like a crispy latke crusted schnitzel. Yum!

The best schnitzel I ever had was coated in dry falafel mix. It was delicious!

I have this in the air fryer right now. Going on the theme, I'm going to do caesar dressing for those who don't like spicy mayo. Hoping its a hit. The crumbs definitely stuck on better than with egg.

Marinated in Italian dressing for a few hours, then coat in cornflake crumbs and bake on 500.
Best when it's chicken fingers.

Thanks for all of the ideas! I ended up using corn flake crumbs and doing some of them with egg, some with garlic mayo, some with BBQ sauce, and some with a BBQ sauce/hot sauce mixture. I'm pinning this thread for future dinner ideas!
