Hi all! I'm looking for delicious vegetable soup recipes that are lower in starches. Could have some starchy vegetables but lower is better.

Just Google "Kosher Keto Soup" and you'll come up with thousands of options.
One of my favorites is cream of mushroom. The only starch you need is just a tablespoon of flour to thicken the sauce. Everything else is milk, butter, cream, celery, mushrooms, salt, and pepper.
If you make a thicker version of the mushroom soup, you can pour it over steamed vegetables, and then put it under the broiler for a few minutes until it is bubbly. If you want to be fancy, sprinkle some cheese on top before you broil it.

Onion chopped
3-4 zuchinni chunks
1-2 carrot chunks
Sautés veggies in some oil for about 10 minutes
Add about 64 ounces water
Salt and ground white pepper to taste
Cover, pot and simmer for about 45 minutes
Blend with an immersion blender
Consistency should be smooth and creamy

Squash soup
Saute a large onion
Add cut up squash with peel on
Add a little water, to cover a little less than half the squash
Add salt
Cook until soft
Add chicken soup mix
Blend
It's very thick and hearty and all it has is squash!
