I got a frozen solid package of chicken breasts but I dont' want to thaw it all, how do I do that?

Thaw it slightly, just enough to break apart the pieces of chicken to be able to portion it out.
To speed up the process, remove the packaging from the chicken, place the frozen chicken in a Ziploc, seal, and dump it in a bowl of cold water for about an hour.
Then put the parts that are still very frozen back in the freezer, while you continue defrosting what you need now.

If you thaw it in your fridge you can re freeze what you did not use. You cant do this if you defrosted the chicken any other way like sitting on counter or a bowl of water.
