My boys, since about age 1, "amen" anything that sounds like a bracha! We try to make all our brachas out loud so it becomes something normal and expected, and so they can amen it. My 3 year old is also in the stage where he will make a bracha for every bite if he could.
We do Modeh Ani in the morning, and some morning brachot including tzit-tzit for my 3 year old.
We always do Shema at night, for babies simply the first line, for my 1 year old, at least the first paragraph, for my 3 year old, more. We do the whole bedtime routine, and last, tuck them in, give a kiss, and sing Shema.
