If you're going to try a bunch of new recipes, make a trial run first. You don't want to spend all day cooking just to have nothing turn out right at the last minute.
Personally I'm more impressed by meals with a variety of basic sides and salads. So say challah, chicken, rice, normal basics, but with a variety of homemade spreads, salads, roasted veggies with interesting spices, things like that. The table looks so full and colorful, there are amazing aromas, but really everything was quite simple to make, despite looking impressive.
Some suggestions:
Roasted garlic (slice the top off a head of garlic, exposing the cloves, drown in olive oil and roast covered till soft).
Butternut squash (sliced in half down the middle, seeds scooped out, sprinkle with some cinnamon, nutmeg, and a bit of maple syrup, roast till soft).
Cherry tomato salad (cut in half, roast on low heat, mix with garlic, olive oil, and basil).
Bean salad (colorful and filling).
Honey ginger carrots (boil carrot slices in some water mixed with honey and ginger, finish off in the oven if you want to make it fancy).
Roasted potatoes (cube, mix with oil, roast till golden, sprinkle with paprika, tumeric, and cumin to finish off).
Each of these things take mere minutes to prep, but if you have enough you have such beautiful colors and aromas on the table.
