Freeze ahead breakfast ideas

Hey ladies I could really use your help. I'm currently:
Gluten free
Sugar free
Dairy free
Nitrate free
Nightshade free (potato, pepper, tomato, eggplant)

I'm preparing food for pp so I have breakfast without needing much assistance from DH. So far I have a weeks worth of smoothies and I'm looking for something a bit more nutritious that I can also freeze.

Maybe a nutrient packed muffin or something like that? All ideas and recipes welcome.

What was your go to food pp?

Thanks how does that taste out of the freezer? Hormonal me may cry if it's soggy.

I find freezing baked eggs in muffin tins to work well. Then you just pop out however many you want on a given morning and put them in the microwave. You can mix into the eggs whatever mix ins you like. Make sure to grease the muffin tins before baking or they stick. I find muffin liners also stick and have had better luck with just a well greased pan.

Tuna patties
Crustless veg quiche
Broccoli or cauliflower kugel
Cold fruit soup or cherry soup
Spinach
Greenbeans with almonds
Frittata
Stuffed portabella caps
Qinoa with veg
Rice w veggies
Spinach broccolli muffins
Mushroom kugel
Zucchini mushroom kugel
Stir fry veg kugel.
California veg kugel
Breaded tilapia/flounder with c.f. crumbs, nuts, or coconut
salmon patties


All kugels you can make in individual portions or in muffin tins as a muffin.

eggs are usually fine out of the freezer as long they were fully cooled and wrapped well before packing them away.

I find there's very few egg dishes I can't "fix" with hot sauce and ketchup, are there comparable condiments you like and can keep on hand without peppers/tomatoes? you might want some either way, just to beat any boredom from eating lots of the same thing

We do a lot of gluten free/paleo muffins/pancakes/waffles/quick breads/breakfast cookies with flours like almond, cassava, coconut, tapioca, oat, sweeteners like coconut or maple sugar, honey, maple syrup, stevia. Would these work for you? I can post some favorites.
