More ideas:

-Clean joke books
-I like the escape room, someone already mentioned
-There are many non jewish subscription boxes to adapt. The benefit of yours is, you are providing a service where the person doesn't have to go looking around for boxes that would be kosher, and they don't have to think of the ideas. Definitely worth it in these times when everyone is bored and maxed out of ideas. So I think a good approach would be to research subscription boxes online and see what can be adapted--there are some really creative and fun ones.

If you do include food related activities I think it would be nice to make it universal Heimishe brands to appeal to all

Also, note the food contents (gluten free, allergens) so ppl can choose not to buy it.

Love this idea!

A game like "how well do you know your spouse" and questions that build closeness and sharing.

A cooking competition! For example, 1 weird ingredient per person (cajun, rosemary, beer) that have to be incorporated into a cookie. You can send basic cookie ingredients along and some recipes but they have to use only the stuff in the box and stuff they have in the house already to make it taste normal.

Paint mugs or picture frames for each other.

Pizza making kit with fun toppings.

I would love something like this!

Jewish-themed activities will probably set you apart from other available date boxes, so you may want to include activities such as:

Challah cover decorating/embroidering
Sukkah decoration kit
Havdalah candle making
Flower centerpiece creation
Jewish history trivia game

I love the idea of some of these kits, particularly geared towards Judaica.
For example plaster pouring and painting as a Mezuza case, a menorah, or judaic themed wall art, sukka decoration
Same with wood burning, paint by number, puzzles, or any other craft.
To set these kits apart and make them more appealing.

I see a lot of what I wanted to suggest was already mentioned.

Sukkah decorations
Exclusive escape room in-a-box kits
A scavenger hunt that's well done
Soap making
Judaica themed crafting sets or activities
Resin craft
Plaster painting, more intricate designs so it's more appropriate for teens or adults
Embroidery or needlepoint
Challah covers
Decoupage
Shadow boxes

I would definitely consider purchasing these boxes, either as a subscription or once in a while treat if I feel it's a good value and of good quality.
I love creativity. I would need to feel that the box was designed really well with a lot of thought and creativity and that the materials in the box justifies the cost.

Maybe you can do special edition Yom Tov boxes - sold before yomim tovim with a holiday related craft/activity.

Great idea BTW. I would totally buy something like this.
