This mother wants me to watch a newborn and fold and put laundry away and iron some stuff (wish me luck on that!) and set up dinner - salads, dressing, etc. she’ll leave instructions with the recipes

So just her newborn and your son right? In my opinion I would say at least $15/hr (if not $20) You are going to her house and doing laundry & dinner prep. And newborns are a bit more work than babies and toddlers.

I still say $20. I pay my cleaning lady $15. I think someone to watch your child is more - especially you pay a premium for someone from your community. Even if she brings own child.
And if you don’t eat to iron tell her up front.
