I use plastic sheets. Like the type you’d re-use on the Shabbos table. The sell it on a roll bulk and cut by the yard. It’s not super cheap but easiest for me and I have a small space. It covers backsplash and counter. Just cut with razor around sinks and outlets. Wipes down easily. I throw away every year.

Before we had our granite counters, we did this and it was SO CHEAP AND EASY!!

Line the counters first with heavy duty foil. Do not skip this step. Then, purchase linoleum tile STICKERS from home depot. They are super cheap. Peel off the back and stick it to the foil. They are super easy to cut to size. You can easily wipe these down as needed on pesach and it makes a great surface. When pesach is over, just peel off the whole thing and discard. It was maaaaaaybe $30 for our whole kitchen each year (various kitchens; we rented for a long time).

I cover with a roll of plastic. Then I put some floor tiles on the counter. The tiles are 2ft, the perfect depth.
The tiles I use are ceramic, but lenolium stick ons could be used too.

I once saw someone taped down large aluminum pan covers, many of them, straight down her counter. I thought that was genius.

This past year we used press n seal. Was super easy, cheap, stayed put and was waterproof.

Down side, left residue on the counter that I had to clean off after pesach.

Marine vinyl. You can buy it by the yard. It’s thick, soft, water resistant , and after cutting it once it will last you forever. And folds up thin for storing.

The former owners of our house left us heavy plastic covers for the counters. They didn't fit around the sink. We use heavy duty foil for the rest, taped down with NOT heavy silver leaves residue tape.

You can buy the thick clear plastic tablecloths that are for covering your tablecloth( not the disposable ones) and cut to the size of your counter and tape. They usually are around 3 dollars in amazing savings.
Fyi- while this is the easiest and cheapest way I have found, if you use your kitchen alot (making a full pesach) it is hard to keep water from getting under the plastic over the course of pesach

I and everyone else I know uses corrugated plastic from Center of Town. We cut it with razors to fit around sinks and electrical outlets.

I grew up with a layer of fool topped by linoleum. A pain!

Last year when I had to make pesach, used the corrugated plastic. A mechayeh!!! Just tape the edges

We just use the heavy duty foil on all the sinks and counters. It's easy to bend and cut to the right shape and after pesach, it just gets folded up and put in the trash.

We have a piece of corrugated plastic that does not fit any part of our kitchen. Every year we take it out, try to fit it somewhere, give up and put it back. I think at this point it's just minhag Laugh
