Advice for leaving a crockpot on for 3 days? Is it dangerous?

If you only need it on for Shabbos, use a timer with only 1 OFF pin.
Manually turn the dial to ON before Shabbos starts, have the OFF pin set to 3pm or so the next day. And that's it. It won't turn back on since you're not leaving in any ON pins.

I’ve left mine on, empty, all week more than once and it was totally fine. (By mistake, I only noticed when putting up the cholent the next Friday)

Filling it with water on Yom Tov can be a problem if you don’t plan on using the water on Yom Tov, ask your LOR.

I've done it. I use it on and off for a 2-3 day yuntif. No timer.

There was an article on fire safety in one of the Jewish publications a couple years ago after a horrific shabbos house fire, and one thing specifically mentioned was that hot plates and crock pots are simply not made to stay on for a few days. If you must, use it with a timer.

I don’t even own a Pesach crockpot! I make yapchik, which I put fully cooked and frozen into the 200 degree oven right before shabbos, and then we have overnight yapchik 🤤

I usually cook the beef for the yom tov seuda, in the same crock pot. I use liners, and give the crock a quick wash in between uses. At night somewhere after the zman, I put up the next days seuda meat.
