These are delicious. You can julienne a zucchini for noodles in the soup, and use the remaining middle of the zucchini for the chicken matzah balls.
Chicken “Matzah” Balls (fluffiest when eaten fresh)
• 1/2 small zucchini, peeled and cut into chunks
• 1/2 small onion, peeled and cut into chunks
• 3/4 tsp kosher salt or 1/2 tsp table salt
• 1 pinch coarse black pepper
• 1 large egg
• 1/2 pound ground chicken breast
Combine the zucchini and onion chunks, salt, pepper and egg in the bowl of a food processer fitted with the knife blade. Process until smooth. Transfer to a medium bowl.
Add the ground chicken to the bowl and mix until well combined and sticky. Place the batter into the freezer for 15 minutes to make it easier to work with.
Fill a 4-quart pot 2/3 up with water. Salt the water and bring to a boil over high heat.
Working quickly with wet hands, form small balls and drop into the bubbling water.
Simmer for 20 minutes.

1 cup of cream cheese
1/3 cup mayo or sour cream
1 cup of finely chopped green olives (with or without pimentos.)
Mix well, and spread on matza whenever you get the munchies between meals. DD loved this for breakfast, along with a scrambled egg and some tomato slices.

There was an onion dip recipe in Family First that I've been making all the time. Not the exact recipe, I don't look anymore.
Pour 1/2 c. oil into a 9x13. (I do less). Spread 3 diced onions on that, sprinkle with salt and pepper. Roast at 350 or 400, I think 400 till golden, stirring once or twice. Process with 3/4 c. mayo. I don't process for too long.

I just mix 5 sautéed onion cubes (or 1 sautéed onion, but cubes are lazier and easier) with 1 C Mayo, a Tb of water, and a Tb of brown sugar

Pulse family size bag of chips in food processor (not too fine).
Coat chicken in seasoned mayo. Dredge in crumbs. Arrange on a greased cookie sheet, spray with oil, and bake in preheated 400 degree oven for 20 minutes.

Scalloped Potatoes
Ingredients
9-10 large potatoes
2 large onions
6 Tbsp oil
5 Tbsp flour or potato starch
½ cup mayonnaise
3½ cup chicken stock
½ tsp salt
- pepper and paprika
Instructions
Preheat oven to 350ºF.
Saute onions in oil for 7-8 minutes until clear and soft.
Add the flour/potato starch, stirring well.
Add the mayonnaise and chicken stock. Let cook 2-3 minutes until sauce thickens. Set aside.
Peel and slice the potatoes into ¼-inch thick slices.
Pour 3-4 ladles of sauce on the bottom of a 9- x 13-inch pan. Spread a layer of potatoes going clockwise around the pan. Spread sauce over the potatoes. Add another layer of potatoes and end with sauce on top.
Sprinkle top with salt, pepper and paprika (sauce, potatoes, sauce, potatoes, sauce). If you use a Pyrex or any taller dish, you can have 3 layers of potatoes and 4 layers of sauce.
Bake for about 1½ hours. |
This sounds really good. Do you bake it covered, uncovered, or both?

You quoted me but I never made it. I just posted it as a written out recipe for those who can't see images.
Having said that, the instructions do not indicate to cover so I wouldn't.

Do they make the cubes KLP? I thought they were kitniyos.
And I don't add sugar.
But sounds great!
