The source says it all - Real Simple. Not gourmet but just as easy as takeout. Obviously you can use any cooked chicken and save a bit of money by not buying rotisserie but with rotisserie it comes together quickly
Chicken should be "warmish" so if you are using refrigerated chicken I would nuke or otherwise warm carefully so that it warms up a bit but doesn't get "cooked".
it's easy to tinker with the ingredients - make more sauce and you can add more vegetables. Carrots would be a good addition. Sugar snap peas would also be good - I prefer the sugar snap peas to snow peas as they are sweeter.
Gingery Peanut Noodles with Rotisserie Chicken

HANDS-ON: 20 MINUTES
TOTAL: 20 MINUTES
SERVES 4
½ pound spaghetti
½ cup peanut butter
3 tablespoons rice vinegar
3 tablespoons low-sodium soy sauce
1 tablespoon brown sugar
1 teaspoon grated fresh ginger
1½ cups shredded rotisserie chicken
1 red bell pepper, sliced
½ English cucumber, cut into strips
2 scallions, sliced
2 tablespoons chopped unsalted roasted peanuts
COOK the pasta according to the package directions; drain.
BLEND 1 cup water, the peanut butter, rice vinegar, soy sauce, brown sugar, and ginger in a blender. Toss with the pasta, chicken, bell pepper, cucumber, and scallions. Sprinkle with the chopped peanuts.

Peanut noodles with chicken are one of my favorite things. I make mine with extra ginger and a dash of siracha sauce. Use chickpea noodles instead of wheat pasta for extra protein and fiber. With all those yummy flavors, you won't know the difference.
If you pack a lunch, take it out of the fridge in the morning, and it should be room temp by lunch time - no need to microwave.
