Made lots of cooked peeled potatoes, and after karpas, potato salad, and cooking them with ketchup, I still have some left. Any ideas?

Use them as filling for potato blintzes. Mash with eggs, salt, pepper, and lots of fried onions. Stuff into crepes. Serve with warm vegetable sauce.

Whatever you make, use it right away for lunch or dinner today. The cooked potatoes don't last forever and will turn sour shortly (after sitting a 3 day YT - been there, done that).

French fries
Omelet-Layer in frying pan with eggs and spices
If they are pareve- Layer in baking pan with onions and cheese and bake

I make chremslach.
Sautéed lots of diced onion
Mash up the potatoes (you can leave it chunky)
Salt and pepper to taste
Add an egg for about every two potatoes.
Fry large spoonfuls of the mixture in hot oil to form into patties. (Fry both sides until beginning to brown)
It’s a latke made out of cooked/mashed potatoes . They are a Pesach favorite. The sautéed onions makes all the difference.

Eier-gershtlech!
Mash the potatoes, add two or more beaten eggs and a bit of salt.
Cook up the soup, bring to a boil and pour in the poato-egg mixture. The eier gershtlech will float to the top in a big puffy cloud. When you serve the soup, give everyone some of the cloud. Delicious!

My mil takes the leftover hard boiled eggs and mashes them, then adds the leftover mashed potatoes from karpas, add a bit of oil and salt, and diced onion (optional). Serves it in scoops.. Its a change from the regular egg salad.
