I know there aren't too many, but my kids are complaining that they are hungry and don't want matza, chicken, or meat. Not big egg eaters either.....

Any good ideas? Can be gebrochs. May be blintzes, lasagna, or something else? What else can I give them for breakfast/lunch?

Tuna patties or salmon burgers with sliced raw vegetables like cucumbers, carrots, peppers, tomatoes.
potato or zucchini latkes
zoodles with tomato sauce and cheese
salmon with teriyaki or pesto sauce
oven baked potato r sweet potato fries

Do you eat quinoa? If so, boil up a pot, then add 4 eggs, a bag of shredded cheese, and a jar of marinara sauce. (You can also add some spinach, broccoli bits or diced zucchini.) Mix, cover and bake at 350 for 45 minutes. This was a huge hit at my house.

I made cottage cheese pancakes (google "Passover cottage cheese pancakes" for a recipe) and served them with jelly for dinner tonight. Got eaten all up.

my older kids love these - plantain wraps. Puree 4 plantains, 1/2 cup water and 1/2 cup oil in blender. Spread onto non stick baking paper or greased tray in a circle and bake for about 15 minutes until brown at edges on 350.

Also banana pancakes or regular pancakes (I use potato starch) are a big hit with my little ones.

Also, eggs!

Depending on what ingredients are acceptable to you....
Cheese pancakes
Or egg crepes
Eggs/omelette
Shakshuka with cheese
Salad
Matza pizza
I think plc had a couple of interesting ideas too!

Sounds interesting.What does it taste like? Is it more like a mock Mac and cheese or a quiche/kugel?
