Matzah with cream cheese and veggies on top, yogurt with nuts and fruit on top, cottage cheese on matzah or in a cup with melon, almond flour pancakes (4 ingredients)

Various forms of eggs, matzah with various spreads, yogurt or leben. Matzah brei or pancakes (we eat gebrokts).
Options are limited on Pesach, in general. We just end up eating a lot of the same type of food.

Pesach muffins with cream cheese and/or jam. Matza cereal with chocolate milk. Yogurt or leben. Matza with spreads if they want but they usually don't. Fruit and cake if I'm desperate.

But mostly my kids want matzah and more matzah. We stopped eating chametz a week before Pesach so I guess they’re carb deprived.

Cottage cheese pancakes. Gebrokts or not gebrokts (not gebrokts is just eggs, cottage cheese, sugar and cinnamon).
Broken matzah in choc milk (my kids favorite)
Yogurt (with broken macaroon or cookies on top)
Scrambled eggs or omelets
Matzah brei
Fruit smoothies
Greek yogurt cheesecake
Vegetable quiche
