Hi,
I'm hosting a family get together and want to serve a delicious meat dish. Something more than just a roast / corned beef / etc. I feel like everyone already had so much meat and potatoes first days. Something different and really really delicious. Any ideas?

Just before Pesach Family First had a recipe for chicken marsala with beef fry. But that's chicken, not meat.

I usually make it in a crockpot but I'm sure you can do it in the oven too just make sure you cover the pan with foil. Just layer tomato sauce, peeled thinly sliced eggplant, ground meat, eggplant, tomato sauce, ground meat, eggplant, tomato sauce. I add extra water to thin out the tomato sauce bc I leave it in the crockpot the whole day and I'm scared it's going to burn but if you do it in the oven then you can probably skip the extra water.

we were tired of usuals and made ribs and potato salad, could also do fries or chips and coleslaw. seasoned and dressed per your minhag

Most people use meat on Yom tov that needs to cook low and slow. Why don’t you go the other end, and do the meats that are either good high and fast, or grilled.
Try Tomahawk steak, surprise steak etc.
These need minimal ingredients and either a grill, or seared, and then baked on high.

Do you cook the meat first or layer it in raw?

Marinate cubes of club steak overnight in red wine vinegar, olive oil, crushed garlic and salt.
Soak wooden skewers in water for at least 15 minutes (so they don't burn on the grill or from the broiler).
Cut red, yellow and orange peppers into squares. Cut small zucchinis into half moons. Peel mini red pearl onions. Remove stems from small mushroom caps. Brush all with olive oil and sprinkle with salt.
Skewer the meat and veggies.
Grill or broil for about 5 minutes each side.
