1- Sticky orange chicken
Cut chicken cutlets into small pieces. Dredge in potato starch and fry.
For the sauce, boil 1 C sugar for a minute or two, until it melts. Add 3/4 C white wine vin and 1 C orange juice. The sugar gets hard, but then softens once it reheats. Add a slurry (1 Tb potato starch + 1 Tb water) to thicken sauce.
Pour sauce over chicken.
I served with quinoa and broccoli. It got devoured.
2- pulled beef eggrolls! I made a ton because it was so good!
I made pulled beef for first days (wine and bbq sauce) and used the leftovers for the eggrolls.
3 eggs
3 egg whites (save the yolks)
1 C potato starch
1 C water
Make thin crepes, fill with beef, brush egg yolks over top, roll in mashed potato flakes. Fry.
Serve with duck sauce.

I made it too. OMG! It was out of this world. I couldn't get enough. I didn't stop eating it. Was soooo good!!
Eta: I didn't make this one. There's was another one posted on Instagram that I made that was too good.

Sweet potato and Apple Kugel (p.192)
Serves 8-10
Ingredients: 3 medium sweet potatoes peeled and cut into chunks
4 apples peeled and thinly sliced
Three quarters cup potato starch
4 eggs
2/3 cup oil
Half cup light brown or white sugar
3 teaspoons baking powder
2 teaspoons of cinnamon
method
Fill in large pot with water about halfway full and boil the chunked sweet potatoes for 35 minutes.
During the last five minutes of cooking add the sliced apples and let them soften as well.
I found the apples needed more time to soften.
Turn off the flame and drain.
Mash everything together with a potato masher until it is mostly smooth with small chunks.
Preheat the oven to 350 degrees Fahrenheit.
Add the potato starch eggs oil sugar and baking powder to the mashed sweet potato mixture.
Spread it out in a 8 by 11 in pan lined with baking paper.
Sprinkle the top with cinnamon and bake for 35 to 40 minutes or until the kugel is firm and done.
It should be a bit moist and its center
I found that it froze well.
