I usually melt butter, add milk w diff types of cheeses, melt it and mix it w the Mac. I drain the mac without rinsing. What's the trick to perfect mac-n-cheese?

Are you making a true white sauce / béchamel first? Mix equal parts by volume melted butter and flour to a pan over medium low heat. Add milk VERY slowly while stirring. Then melt in the cheese and any spices.

I always add a teaspoon of prepared mustard and a dash of salt and pepper to the bechamel sauce. I don't add cheese to the sauce. I scatter grated cheese on the top of the macaroni and sauce before putting in oven. This also cuts down on calories.
