What to do with all these onions???

I have tons of onions left over form Pesach. What should I do with them? What can I make for SHabbos? I made onion dip lst week....

You can make onion rings. They are delicious. We made them coated with eggs and potato starch and fried them. They are very pretty and delicious. Maybe you can find a good 'chometzdige' recipe.

Also, many people saute onions and freeze them to use for the future.

Onion Kugel

5 onions, very thinly sliced
1/2 cup oil
1/2 cup water
1/2 Tbsp salt
1 1/4 cups flour
2 tsp baking powder
5 eggs
pepper to taste

Preheat oven to 350 degrees.
Mix all the ingredients together and pour into a 5 pound oblong pan (half a 9x13) lined with parchment paper. Pack / pat down the onion batter once it's in the the pan.
Bake until brown, about 1 hour and 10 min. Serve hot.

Stuffed Onion
Saute onions to use in mash potatoes and other items. You can keep in fridge and use as needed.
Freeze onions and use as needed
Cucumber salad

Onion soup
Chop and freeze
Chop, sautee and freeze
Onion challah (you can put it in the center raw, and it will be perfectly cooked when the challah is baked)

If you can keep them in a cool dry place, and not in a plastic bag, they'll last quite a long time and you can use up them gradually. They shouldn't need refrigeration.

I just went through a whole bunch of onions as I was cooking for shabbos

2 potato kugels
Gefilte fish
Sliced under chicken
Will use for Chulent
And will sauté onions and veggies to make omelettes later
There’s always mashed potatoes that need sautéed onions or a soup
The onion kugel is a good idea if your family will eat it

Wow!!! Thanks so much for all these great ideas!!

Onion dip was very easy. I sautéed 5 onions with 3 cloves of garlic, with salt and pepper. Then I added some mayo and blended it with an immersion blender.... yum!

I’m not a fan of onion soup but this one is delicious
Sautée a ton of onions but no color
Add water and soup mix to taste
Boil for about 20 minutes for all flavors to meld

Take leftover challah and cube to get 2cups
Place the cubes INSIDE THE SOUP
Boil another 20 minutes

It sounds strange but it’s so good

Wow, this looks great! I bet I could substitute labne for the yogurt as well. Thank you for posting this. About how many onions does it take to get 6 cups?

Onion dip based on Family First from this winter:
Dice 3 onions. Spray a 9x13. Toss onions with about 1/3 c. oil, and salt and pepper. Bake at 400 till they brown light. Process with mayo, maybe 1/2 c.

Another onion dip but without mayonnaise.

2 heads of garlic
4 onions
6 tbsp olive oil
Salt and paprika to taste.

Slice onions and garlic. Toss with oil and seasonings, and bake for around 2 hours in a 9×13 pan. Stir every half hour or so to ensure it cooks evenly.

Just a reminder that if you would like to cut up onions and freeze for future use pour a little bit of oil or salt on it to make it a "prepared dish "!
