I've fallen in love with making kugel. I make a white potato and a zucchini kugel weekly and now want to experiment with other vegetables. Besides apple, challah and butternut squash, what other veggies can be made into kugel? Does the method or other ingredients change? Usually I add onion, egg, potato flour or self raising flour and oil.

my mil makes a very good veg kugel thats not to "veggi"..
its like regular potato just add carrot and courgette around 5 potatoes to 2 courgettes and 2 carrots

If you're interested I have a very easy delicious broccoli thingy that I make. I do it in kugelettes but I'm sure you can make it as a kugel.
