We have very small meals because we are not big eaters and can't handle large multicourse meals. So I know my menu might seem paltry compared to everyone else, but it works for us

Night meals:
Onion soup with garlic knots
Cheese blintzes with sour cream and fresh fruit
Ceasar salad (I usually do a salmon salad but not this year because I am pregnant and cannot tolerate fish)

Day #1 meal:
Tropical salad
Dairy broccoli soup
Fettuccine Alfredo

Iced coffee and mini cheesecake for dessert

Going out for day #2 meal

We don't eat tons and I don't enjoy cooking, so I try to find a balance between Yom Tov meals that are special and easy to prepare and kids will eat (or at least try).

Fleishig meals
Soup, Knaidels, Noodles, Croutons (from challah)
Roasted garlic cloves
Roast (of some sort, didn't decide yet)
Leftover Shabbos chicken (with rice under) for whomever wants
Krautpletzlach (noodles and cabbage)
Potato Kugel
Sliced potatoes and sweet potatoes with spices
Roasted cauliflower
Zuchinni and onions
Roast garlic string beans
Carrot muffins
Pumpkin chip muffins

Dairy meal
Toast cups with brocolli and melted cheese inside (at least I'd like to, we'll see if it happens)
Blinzes (I really don't like making these, but it was specially requested by my son...)
Hard boiled eggs (for my daughter who will not eat anything else...)
Salmon- probably simple with just garlic and lemon
Lettuce salad, I don't do the "fancy" salads, anyone who wants to ad-lib can do it to their own plate.
Spaghetti with a cheese sauce, my kids don't like tomato sauce.
Cheesecake (made by my mother in law)

I don't really have a recipe, but usually saute onions till soft, add bag of cabbage, lower flame, add salt. Cook till soft. Mix together with cooked egg noodles. That's all :-)

- I bought a 5 lb corned beef on sale
We are not being guests or having guests, so that will be all our fleishig meals. Because my children don’t eat meat anyway!!!!!!!

- re: milchig, all that matters is dessert. Making cheesecake and key lime pie; local home baker is selling cheese babka so I’m buying one. What are the meals, heck if I know, probably scrambled eggs because the kids will eat that and DH will ask for oatmeal because he loves that stuff and he can’t go 24 hours without a bowl...

It is both liberating and maddening to cook for a house full of picky, sensory eaters 😂

Now whatever you do will feel fancy! I’m happy to make other people feel better about themselves by setting the bar really really low 😜

I was just thinking that... yes, prepared in advance. I might leave on my milchig oven on 200. One year I think my husband asked his rav who said that if we cover the fleishig blech with foil we can heat milchig things up.

And can you let me know how the cowboy steak comes out? Looks delicious, wanted to try it but I am not leaving a flame on for yom tov so can't sear it fresh.

Onion mushroom brisket: half and slice 3 lg onions. Remove stem, peel and slice 3 boxes mushrooms. Sauté in oil until soft, add 1c dry red wine and cook down. Place 2nd cut brisket in pan, sprinkle liberally with salt and pepper, spread onion mushroom sauce over brisket, cover tightly and bake at 350 for 3 hours.

Will try to remember to report on the cowboy steak. Was going to post and ask how to adjust reverse sear timings for well done. That’s the only way some people in our family will eat it.

very relaxed, just us and also due to be warm, not super interested in heating up the place - I haven't thought much further than tuna noodle salad (because I like it and it makes me happy) good iced coffee fixings (because coffee), store-bought cheesecake (because cheesecake), big bowl of cut fruit and perhaps bagels
