Is there a to prevent it? We put in the meat raw.
Are we supposed to cook it first?

You can brown it .. but you don't have to . We never brown our cholent meat....

Also what do you mean by gunk?

HnF, I'm wondering if the gunk is coming from the beans. Or if the cholent pot is on a too low flame/temperature.

Do you use meat bones? Those can create dirt in the chulent.
Solution, add it to the pot when it's boiling, and let it boil for an hour after. I think one hour on high is too little.

Maybe replace the potatoes with rice, to absorb the meat flavours and bits?

I think the temperature might be the issue. I put it on high until right before shobbos and then turn to low. I think one hr might be too little

Agree about the temperature - keep it on high for a few hours.

Also, it needs something to thicken it - barley, beans or even rice.

Putting meat on top is fine but it has to be completely submerged in liquid.

I put my crockpot on high the whole Friday- 7-8 hours and lower right before shabbos.
