We don't really like "health" food, so I'm talking about food that's not pizza.

I do meatless Monday and rotate between bean dishes, fish and tofu/tempeh. I save the pizza/pasta type food for Thursdays.

For tofu or tempeh which are both soy but the texture is different I make stir fry, crumble it into a taco meat, use it as an eggroll filling. I once seasoned it with shwarma spice but I didnt love that. You might though. I have cut the tempeh into small triangles so each edge gets crispy and baked it in different sauces. I like the texture of it better then tofu but its a little more expensive.

For fish I stick to basics like salmon filets in different sauces, flounder dredged in seasoned flour and pan fried in a little oil and served on a bun with tarter sauce. Fish tacos always go over well.

For bean dishes tacos, burritos, bean burgers, bean soups. There are lots of possibilities.

Falafel balls in pita - salads and techina

Eggplant paninis- I cook eggplant in sandwich maker/panini maker sliced. Then use whole wheat wrap, sauce, lots of eggplant and some cheese.

Eggplant ‘parm’ - layer eggplant, breadcrumbs, sauce, cheese. Cover tightly. Bake until soft. Like 1 hr. Uncover. Pour on tomato sauce. Little sugar (substitute) and olive oil. Bake uncovered. (I’ve made this for years and it’s delicious. This shavous it was a flop maybe bec I couldn’t uncover).

I made tofu that actually came out really good. Make sure to drain, press and get out all the water/liquid.cut in squares. Mix with corn starch a bit of oil and soy sauce. Lay flat on a sheet pan and roast at 425 for about 20 min till crispy.
Salmon burgers. Omelets or shakshuka. Hearts of palm pasta (make sure to to drain well and I boil them) sub pasta with a veggie like eggplant etc
Fish tacos (not fried)vegetarian chili

I make a really easy (and pretty healthy) pareve chili that can be eaten alone (as a soup) or over pasta, rice or even spaghetti squash.

Salad topped with any of these, cubed avocado, cubed salmon, lox pieces, nuts, grated parm cheese, two toned shredded cheddar cheese.

Avocado egg salad
Mushroom egg salad
Mock liver
Hungarian cheese salad

Broccolli soup with melted cheese
You can do ziti with spaghetti squash

Low carb wrap pizza panini or tuna melts

These dishes are all low carb idk if low calorie though

Omelettes, baked beans
Rice and refried beans
Pasta, ratatouille, cottage cheese
Baked potato, tuna salad, fresh cut veggies
Salmon, broccoli
Tuna poke bowls
Corn tacos with fake meat crumbles. Trader Joe's makes really good meatless beef crumbles

Avocado toast topped with poached eggs
Halibut with rice & tri-color zoodles
Vegetable frittata with hash browns
Eggplant boats with sauce & cheese and baked potato fries
Salmon skewers over salad with side of baby potatoes
Bean tacos sprinkled with cheese (or over rice or salad instead of a taco)
Roasted veggie wraps with feta cheese
Baked falafel balls with roasted eggplant, pickled veggies, baked sweet potato fries

Not for today's weather but I like to just make soup:
Split pea soup(add cubed hot dogs!)
Mushroom barley soup
Zuchinni soup
Lentil soup( we like it with rice on the side)
Minestrone soup (add noodles for a complete meal!)
