Hi all, I’m looking for some healthy lunch ideas I can prepare for myself when I’m home this summer. If I’m not prepared, I’ll just eat a bagel every day, and that won’t be good!

Bonus points for easy, plus basic ingredients (I live OOT so not everything is available).

Mushroom egg salad
Mock liver
Hungarian cheese salad
Cantaloupe with cottage cheese
Veg cheese omelet
Oat bran
Ceasar salad with grated parmesian cheese
Grilled salmon/tuna steak
Canned tuna steak with mayo purple cabbage
Sugar snap pea salad
Tuna mixed with salad
Scrambled eggs mixed with salad & little mayo
Panini or tuna melt from low carb wraps
Whole wheat bread instead of bagels
French toast from flax bread

Thise ideas are rygood for adult lunches. Not so much for kids.
I need to send lunch daily for two children, they won't eat any of the above choices.

Lol, I’m looking for ideas for myself. I need something filling but not too high in calories.

My kids will probably get noodles, fish sticks, pizza, etc.

Homemade granola with almond milk
Avocado toast on whole grain bread
Salads-the sky is the limit to what you can throw in: veggies, nuts, quinoa
Wraps with avocado or egg
Bean dip with veggies
Chumus and veggies
Tuna
Salmon
Matza and dips

Mash avocados with with hard boiled eggs, light mayo, spices like salt, pepper, garlic powder can add in scallions too.

Mushroom-egg

Saute mushrooms with onions. Mix with hard boiled eggs. Add in light mayo. Spices. Grate into finer pieces with hand blender/chopper etc.

Whole grain toast with cc and lox
Avocado toast and eggs
Veggie omelet
Green salad with protein (can be leftovers chicken, tuna, salmon, chick peas, eggs...)
Kani salad with mango, avo, cucumber, carrots (all shredded)
Israeli salad with feta or chummus on top
Wrap with tuna/eggs, avocado, veggies
Veggie burger in a salad or wrap

Hi OP- I like making meals for myself that require *no* effort.

Today for lunch I had brown rice pasta topped with canned artichoke hearts, salt and olive oil

Sometimes I'll just smash an avocado on a rice cake or two and top with smoked lox or smoked tuna (trader Joe's)

Trader Joe's also has hearts of palm "pasta" and sometimes I'll steam and have with a mashed avocado.

You get the idea...

Salads
At the beginning of the week food prep some ingredients:
Roast sweet potatos
Can of corn roasted
Chickpeas
Brocolli and cauliflower
Sprinkle with oil salt and pepper roast on 450 for 20-30 minutes
Cook hard boiled eggs
Cook quinoa
Prepare tuna
Make 2 salad dressings or buy the ready made
And you have lots of components to make delicious salads
Exp- lettuces tomato’s tuna sweet potatos roasted corn
Lettuce avocado feta cheese hard boiled eggs chickpeas
Lettuce cucmbers avocado quinoa salmon brocolli cauliflour chickpeas
Lettuce cucmber tomatoes grilled chicken corn chickpeas
Cold cuts...
so many different variations you can make

In the beginning of the week a prep lunch for the week
This week I checked lettuce, spring mix, made salmon cubes, grilled chicken and quinoa
Cut veggies and split them into salad containers. Day of lunch I’ll chose which one I want and add dressing. Also I add avocado or and or feta depending

I know I’ll have to be prepared in advance to have healthy options available, but I wasn’t even sure where to start. I’ll definitely be referencing this thread.

Toasted Ezekiel bread (avail in non-kosher groceries and Trader Joe's, usually the freezer section)
with:

sliced avocado + sliced tomato + salt + maybe some cheese
scrambled egg + hummus + maybe some veggies cut up on top
natural peanut butter (PB made with JUST peanuts and nothing else; Trader Joe's has a really affordable one) + dill pickles, maybe some sliced peppers + maybe some cheese (spicy works really well)
cottage cheese and veggies
scrambled egg + cheese + ketchup
sliced tomato + lettuce + cheese
hummus + olives + veggies
sliced hard boiled eggs + smear mayo
tuna with mayo + cucumbers or peppers or lettuce + dill pickles or olives

you can also dress up a bowl of lettuce with ANYTHING AND EVERYTHING:
prechecked, pretoasted nuts; crumbled feta; chopped hard boiled eggs; all manner of veggies; premade chickpeas or lima beans; craisins; fruit; olives... you may not even need dressing at all once it's fully loaded

wraps with scrambled egg + ketchup or hummus

cottage cheese with sliced peaches and toasted almonds

greek yogurt (plain or vanilla) with chopped fruit and toasted almonds
greek yogurt (plain or vanilla) with pretzels

cheese stick with pretzels or toast and veg

kasha with milk or soy milk
oatmeal slow-cooked (20 minutes low heat) with soy milk and cinnamon

hummus with veg and pretzels (this is more a snack than a lunch, just warning you)

I used to love quinoa but recently the star-k holds that it's super infested and you need to sift and check it so no more quinoa for this busy mom

soups and bread - but I"m NEVER geshikte enough to have that ready!!!

Some weird recipes that have worked for me over the years when kids refused all else:

[aside from the basic sandwiches: tuna/pickle, butter/cheese, cream cheese, egg salad, etc]


three-section container with hummus, veg, pretzels
baked potato with small container ketchup (!!!)
scrambled egg sandwiches
yogurt with a straw + dry cereal in a baggie (or pretzels)
dry cereal in a bag plus a thermos of milk and a spoon (teachers hate this)
avocado + cheese (kids can get teased for this unless they LOVE avocado)
straight up hummus sandwich on whole wheat (!!)
peanut butter + pickles (ONLY IF YOUR SCHOOL IS NOT NUT FREE)
crepes or pancakes made with half almond flour and whole wheat (again nut-free schools a no-no)
cottage cheese and pretzels
scrambled egg wrap

I know there are moms who send pizza (my kids hate congealed pizza)
leftovers don't work for us for a million reasons but many people send supper leftovers (??)

at home some weird lunches that work for us

kasha with milk (you need to start at birth for this it's an acquired taste)
brown rice cooked with ketchup, then melt cheese in (a fad they once loved now hate)
grilled cheese
tuna melts - one day this will work
tuna with potato chips and cut up veg
pancakes or crepes made with whole wheat flour and almond flour
scrambled eggs with buttered toast
sunny side up eggs with toast OR Snyder's buffalo wings pretzel bits (OUD-E as of a few months ago, though the label only says OUD)
oatmeal, farina, or cooked oat bran with milk
avocado (mashed or sliced) with ketchup and cheese, melted on rice cakes
premade chickpeas, cut veggies, and something else (eggs and toast, etc) - chickpeas are a great holdover until 'real' food shows up

I just bought a panini press (bread + cheese + veg, or wrap with cheese and ketchup folded over for quesadillas)

a lot of this sounds complicated but the older kids get they can make for themselves, which helps!
