I have been making lately yummy diary brioche buns. I'm really enjoying it but I want to change the glaze that I cover it with. Before I bake I cover the buns with a mixure of egg & sugar. And right after baking I cover it again with a cooked mixure of egg white, water, sugar and a little lemon juice. It is a white thick, very sticky glaze. It doesn't dry out, but leaves a sweet sticky layer on the buns. I think the eggwhites are aggravating my babies eczema, so I'm looking for a different glaze recipe. Do you know something that will fit this description?
Also I have leftover glaze from last time I made it. I froze it. Any idea if it's still useable?

You can make a glaze using confectioners sugar and hot water.
