does anyone have any interesting non-gebrochts side dishes for pesach? I'm trying not to make stuff too fattening and yet something the grandkids will like.

I would like some interesting salads and veggies. I'm tired of the regular stuff. obviously, potatoes are a staple on pesach but making them without added fat would be great. those baked fries sound great for the kids. thanks a lot.
