Rhubarb fool
Rhubarb crumble (with ginger)
Stewed rhubarb, with strawberries, apples, plums, or any other fruit. (I have a batch in the crockpot as I write)

I make a rhubarb berry compote.
1 bag each of frozen rhubarb, strawberry and blueberry.
Some vanilla sugar, and xylitol, and water. Boil, simmer, cool and enjoy.

Love rhubarb. Such a short season so I usually freeze mine. I make rhubarb coffee cake, cold strawberry rhubarb soup, and NY times has a rhubarb chicken recipe that’s interesting too

Strawberry rhubarb compote or pie. It's been a while. You can easily put honey, etc. in the compote instead of sugar. (It'll need some.)

Rhubarb compote:
2 packs rubbarb one cup sugar cover with water cook till soft
Close flame and put in frozen strawberries and let sit a few minutes and then blend
