Celery
Shredded cabbage

Saute until it's soft (but not too mushy).

Add 3 eggs

2 garlic cubes (or powder)

Pour in to a Quiche crust or 9 inch round pan.

Bake for 45-50 minutes on 350.

For dairy version: add a 1/2 cup shredded cheese to the mix.

After baking for 40 minutes, sprinkle cheese on top and bake an addifonal 5-10 minutes.

I'll post more recipes later bln.

**sorry, I don't have measurements. Just put in more of the veggies that your family likes and less of the ones they don't....

Dairy salad:

Lettuce
Cherry tomatoes
Purple onion
Black olives
2 tone shredded cheese
Ceaser dressing

Squash Boats:

Squash sliced in half lengthwise
(Really large squash can be sliced once in the width as well making 4 boats vs 2.)
Bake until inside is soft
Scoop out inside and saute with diced onions, diced red pepper and mushrooms. Add cheese when almost done and mix util melted.
Place the mixture back into the empty squash Boats and bake until cheese turns golden/ brown.

You can skip the red peppers or mushrooms if you'd like.

You can also serve the mixture plain if the boats didn't make it thru the scooping.

I made a great curry tilapia tonight.

2-3 tilapia loins, quartered
Flour, salt, pepper
1/2 can coconut milk (or more to taste)
Red curry powder
1 onion, sliced
1-2 handfuls of fresh spinach
Oil, butter, or margarine for the pan

Toss tilapia pieces in seasoned flour to coat. Shake off excess. Oil pan and cook on med high for 3-4 min; turn them so each side gets a chance to get crispy. It's ok if under done bc it'll simmer in the sauce later. Remove from heat.

Add sliced onions & saute until translucent. Add 1 tbsp red curry powder. Allow to get fragrant in the oil for a min or two, then add coconut milk. Add more curry powder if you'd like at this point. Let heat through, then add spinach; after a minute, add the fish back in. Let simmer for 10 min or so, then serve on bed of jasmine rice.

What is seasoned flour? There is no flour listed in your recipe.

It's there! Smile Right under "2-3 tilapia loins, quartered" it says flour. Just mix the flour with salt & pepper or whatever other spices your family enjoys, and then continue with the recipe

Cook 6 large whole potatoes. Also cook 8 hard boiled eggs. Drain. Slice potatoes & eggs. Line 6×9 pan with one layer of potatoes. Top with sour cream for dairy or oil for pareve. Sprinkle with spices like salt, pepper, paprika. Then top with a layer of sliced eggs & sour cream/spices. Keep alternating the layers till pan is full. Eggs should be top layer. Bake in oven. Top will become somewhat browned a bit. If you like it soft & moist than bake for shorter amount of time. For a variation, you can also add in sliced cheese to melt.
Hungarian dish called rupetcrumpli
