I guess you can do soups
Veg soup
Mushroom barley soups
Split pea soup
Tomato soup
Broccoli soup
Butternut squash soup
Zucchini soup
Fruit soup

White rice
Orzo
Pasta
Corn
Potatoes

Salads
Fruits

Non dairy cream cheese, sour cream, am cheese

Cooked veg
Spinach
Sauteed squash
Letcho
Stir fried veg blends
Roasted veg
Breaded cauliflower
Green beans

The ones that can have dairy can add melted cheese to some dishes, or yogurt/sour cream or cottage cheese to fruits.

The ones that can have nuts can add to salads/yogurts.

The ones that can have eggs can add that to some dishes like letcho or zucchini.

You cook pasta, some can get it with cottage cheese, some with cocoa, some with bread crumbs, some with saute'd veggies.

You do orzo, either with mayo, ketchup, melted cheese & mushrooms, or with sauteed veggies.

Veggie cutlets, plain, or with melted cheese, veg in a roll like a burger sandwich.

Veg sushi

Veg kugels like broccolli , plain or with melted cheese on top.

Fruit smoothie with orange juice, or with milk/yogurt.

For the chili, I saute onion, then crumble up a block of firm or extra firm tufu into the pan and sprinkle with garlic, cumin, salt and paprika (can use cayenne for spice) and brown. Then I add carrots (I use canned for convenience- already cooked) and a can of baked beans. I add a cup and a half or more of tomato puree, and water or veggie broth of the liquid from the carrots, and more cumin and garlic and paprika to taste, and ket it thicken up. I serve mine over fries, regular or sweet potato, with cheese for those who want.

Pasta sauce is sauted onion (I prefer red), garlic and baby bella mushroom, then crumbled tofu to brown, then tomato puree or sauce. When it's not the 9 days, I like to add a splash of wine left over from Shabbos. It's pretty quick, and very filling with pasta.

For both recipes, it helps to cut the tofu block in half or thirds and blot some of the liquid out before crumbling.

If rice/couscous/ quinoa are ok, id stuff vegetables w rice and sauteed mushroom and onion.
Also if you get really big portebela mushrooms you can grill those and make pesto portabella burgers w some more vegetables inside.
Also adding Bannana muffin idea for breakfast?

my son also has allergies.... called my rav he said till like two days before tisha bav he can eat chicken... he is married doing it till today....
