DH and I are thinking of going somewhere to the mountains (not NY) for a couple of days. Will probably AirBnb a cabin or something. Looking for meal ideas for the two of us that can be made with limited equipment- we have an electric pan and I just bought a small electric kettle. Also thinking of probably buying a couple of those disposable grills.

You can use the electric pan to grill and saute.
The electric kettle for boiling water to make instant side dishes.
Some good ideas here.
