Has anyone done this? If cholent was frozen can I defrost it and heat it the whole shabbos to serve during the day?

Yes.
Wrap tightly and stick in oven before Shabbos.
I serve it teen boys often. They devour it and don’t complain. (They also don’t know)

Yes on low with about 2 inches of water. I do this often.

potatoes don't freeze great but barley, meat and kishka are fine frozen then reheated.
