I have been making challah for many years in the Bosch. For the past year or so it hasn’t been rising nicely at all. I tried making it by hand and it rose beautifully suggestions PLEASE

A few tips I got from someone that have completely changed how my challah comes out- I don’t which is the most helpful one, so I’ll share them all!
Put yeast in Bosch with sugar/ warm water and after it bubbles/ rises add ingredients (I used to do in separate bowl)
Seltzer instead of the cups of water in the main ingredients
Try this flour- King Arthur’s Bread flour- texture of dough is amazing with this most weeks:) and tastes delicious
Oil a tablecloth and put dough to rise in it
Bake challahs in loaf pans at 170• for 20 min to help rise and then at 350• for the next 40 min or until golden brown

Im going to add that also, once you see the dough coming together, let mix for 12 mins. Stop the machine for 5 mins and mix again for another 5 min. This will give the gluten in the flour a chance to actually activate and when you braid it, the braids won't tear apart.
