I wanted to incorporate some of the simanim into a salad, but not sure how to "make up my own recipe". Here's what I'm envisioning:
Romaine lettuce topped with roasted carrots, beets and butternut squash with some kind of vinaigrette dressing, and maybe even toss in some chopped dates?
Wondering if any such recipe already exists?
Oh and also, my butternut squash is frozen, and my beets are the vacuum packed precooked ones. But I can still roast them, right??
I would totally throw in roasted sweet potatoes as well...
Hoping someone can give me some directions - it looks and tastes delicious in my head, but don't know how to make it into a reality on my own...

I have a recipe from here roasted beets and sweet potato with quinoa and lettuce. Dressing has honey. You could totally swap the sweet potato for butternut squash.

I used lettuce instead of spinach. And skip the green beans. I think the recipe is easily adaptable.
