Lol! I guess for me don’t need exotic, just more modern I guess. Like my mom does potato boreka and mushroom sauce as an appetizer, I’m not looking for that kind of thing…

Last Succos when it was just us, we decided we wanted some fun meals instead of traditional roasts and sides so we made meat pizzas for one meal. If I remember correctly, we had a pulled beef with BBQ sauce pizza, a honey-mustard deli pizza, and a pineapple and hard salami pizza with teriyaki sauce. We served a salad and done. It was a blast!

Appetizer ideas:
Fish (sea bass, salmon…) tacos with mango salsa
Gnocchi with pulled beef or duck or lamb
Pulled beef tacos with purple cabbage slaw
Wonton rounds with meat or fish topping. (Here’s a good recipe for that https://www.kosher.com/recipe/.....-1061)
Chummus plate with beef or lamb topping

Main ideas:
A Charcuterie board is my go to when having guests. I have a huge wooden board and I do a room temp rare grilled meat (steak, London broil…), hot meat (pastrami, corned beef), some sort of grilled chicken, grilled vegetables (baby peppers, mushrooms, zucchini) and some garnishes and condiments (little pickles, garlic mayo, greens…)
You can do all that not on a board too Smile
Duck breast with blackberry/fig/orange sauce
Short ribs
Rare grilled meat with a gremolata
Miami ribs

Sides:
Puréed parsnip
Roasted mini potatoes
Grilled veggie platter
Roasted cauliflower
Roasted mini colorful carrots with maple sauce
Jeweled rice
Hasselback potatoes

Pulled beef and gnocchi for the appetizer.
Tri-color soup- get lots of large, disposable shot glasses. Make three different colored easy soups- for example, green zucchini soup, orange sweet potato soup, and creamy potato leek soup (you’ll only need about 1-2 pounds of each depending on how many guests, so now you have all the soup you need for the rest of YT). Each soup can have a different topping, like beef fry, croutons, fried onions, etc. this makes a beautiful presentation.
Fun foods for mains (served family style)- meat pizza, chicken lollipop drumsticks, a large cowboy steak sliced thinly on a wooden board, a pretty jeweled quinoa salad, a good balsamic kale salad, rainbow roasted veggies, any kugel made in pretty muffin cups instead of a pan… just make sure you have a variety of color in your foods and it will look beautiful.
For a fun dessert- a fruit skewer with individual hot fudge “fondue”, pareve acai bowls, or homemade fruity ice pops (buy the larger size ice pop mold, cut bright fruits like kiwi, strawberry, blueberry, clementine into pretty slices, add to mold and fill with apple juice or lemonade).
