We put the soup from erev YK in the crock pot after the seudah hamafsekes, and that's what I served, with challah and kugel.

My kids are big now but I would never have made cholent or anything else in the crackpot. The smell would make me feel sick. That said, it IS yom tov for those who are eating so I used to make a nice, cold meal that they could eat without my help, usually something like schnitzel, salads and cupcakes, plus lots of snacks.
