Repurpose chicken soup chicken

I have a ton of cooked dark meat chicken from a big pot of soup I just made. I'm looking for something interesting to do with it.

I often make chicken patties by mixing the shredded chicken with sauted onion and celery, bread crumbs, spices and eggs and frying them like latkas, but this has become a little boring.

Anyone have a good recipe?

I'd love to try a chicken pot pie

Shred the chicken and reheat in BBQ sauce. Serve on hamburger buns. Kids love this!

You can also shred it and mix with salsa for Taco Night.

Look online for pot pie recipes. For the "cream" sauce you can use any parve substitute.

I make my kreplach filling with shredded chicken from the soup. I sauté and onion with salt and pepper and fill ready made krepel dough. Yum!

Chicken salad. Like tuna salad but with chicken.
Stirfry with veggies and soy sauce and serve on a bed of rice.
Or just shred and throw the chicken back in the soup.

Saute shredded chicken with diced onion, cubed carrots & zucchinis, basic spices like salt pepper or whatever you like. Stuff a wrap with it, for an appetizer for yom tov. The filling can be frozen & put together before serving.

Eggrolls. Sautee a bag of cabbage some mushrooms I like to put some teriyaki sauce for flavor and moisture then mix in the shredded chicken and roll and bake. My kids only knew I used leftover chicken because they were in the kitchen while I made them.

Chicken sandwiches for dinner. Bread or challah. Smear mayo or ketchup onto bread. Add chicken. Top with sour pickles & another bread.

I saw a recipe in one of the recent Jewish magazines for an Asian chicken salad. Shredded chicken from soup mixed with red cabbage with say sauce, ses oil. Anybody can post link

We have this every week. Fry onion, celery, carrot and garlic. Add shredded chicken and a ladle full of chicken soup. Add leftover rice from shab. Delish
