Can anyone post or tell me where I can find an easy rugelach recipe? Most are 5 lb flour, or 10+ cups. I'd like something about at least half that size.

If you want really easy, you can use Rhodes dough. Roll together three balls and flatten.

I saw this recipe somewhere that looked very good. You can halve it.
Rugelach
Dough:
2 oz fresh yeast or 4 1/2 tsp instant dry yeast
1 3/4 cup warm water
8 cups flour
3 eggs
1 1/2 cup oil
1 cup sugar
1 t salt
Filling:
Chocolate-
1 cup cocoa
2 1/2 cups sugar
2-3 tbsp vanilla sugar
Vanilla-
1 box confectioner sugar
7 tbsp vanilla sugar
Cinnamon-
Sugar/Cinnamon
Mix yeast and water and wait for it to bubble. Combine the rest of the ingredients and then add yeast mixture. Once it forms a dough let rise until doubled.
Divide dough into 3 or 4 circles depending on how big you prefer it.
Roll out dough VERY VERY THIN! Paper thin! The thinner the dough the better! Smear oil on entire dough and smear filling on top. Cut into triangles. As you roll up each one pull on the dough and roll. Keep pulling and rolling so that it's extremely thin.
Smear egg wash and let rise another half hour. Bake on 350 until lightly browned.
