I stopped making mayonnaise for a while and now that I have restarted it is always tasting bitter.
Most times I kinda of make the recipe up, I never follow the same one so I'm not sure what I'm doing wrong. I've always used light olive oil, and once it got bitter I used avocado oil and it's still bitter. Can anyone help me? And maybe post a nice recipe as well? I could really use the joy

The oil might be rancid. Or you might be using too much lemon juice. But I think it might be that the oil wasn't fresh.
