I've made really good kugel with boiled potatoes. Just use them like you would raw potatoes, but you don't have to bake it as long. It comes out crunchy on the outside, and creamy in the middle. The best part - no raw spots!
Cheesy twice baked potatoes are always good. Mash them while they are hot, and then add heavy cream and cheddar cheese. You can add sautéed onions if you want. When the mixture is cool, stir in a couple of eggs. Put them in greased muffin tins, and bake until light and fluffy. Kids go crazy for these.
Cream of potato soup, with sautéed mushrooms, onions, or both.
Add to corn chowder or fish chowder. Add to any vegetable soup. (Cubed, not mashed.)
Potato salad, either mayo based, or oil and vinegar. Both are good.

cut potatoes in small pcs. fry some onions in a pan. Add potatoes, eggs and cut up salami or hot dog.
