I made the oat low carb mix, it came out like a batter, couldnt work w it
where did I go wrong?

I had the same experience. I cant imagine working with it I just scooped it into pans to make rolls.

I used her GF mix, not sure if this is the same one you're using.
It is really really soft. What I did was let it sit for a while to absorb as much liquid as possible. Then spread it on a parchment paper (can't remember if I lightly greased it or sprinkled some of the mix). I then spread the filling and used the parchment paper to guide the rolling (similar in movement to making a rolled ice cream log).
I think at that point I put the whole thing into a loaf pan and baked a kokosh cake rather than rugelach.
But otherwise I think I could have carefully portioned slices and baked in cupcake tins.
If you're not using a yeast dough can you chill it first (and then again after rolling)? Maybe that will help...

I made it without the additional water and egg and it was still too loose
I really want to make deli roll, its something my daughter is really sad not to have
