French labeled meat, what to do?

We got a meat package in shul and it is named in French it is bourgion, jarret de boeuf (I know this is koichel and what to do with it) and plate de cotes.

I don't know what to do with the bourgion and the plate de cotes. I don't really love cholent or goulash. I like steak though and it's lik 1.5 kg of meat.

Bourgion is stew meat and plate de cotes is brisket.

I've never done it, but I think you need an ingredient called saltpeter which is hard to get hold of. If you are googling recipes look for pickled brisket.

Yep. Saltpeter is the "common name" and potassium nitrate is the chemical name.
