Can any fully vaccinated (2 shots in April) American get into Israel these days, or is more documentation required?

Rules about to change - at the moment you need an ishur and a reason/connection to get in but starting Nov 1 any "vaccinated" person can enter Israel. "Vaccinated" has specific meaning including no more than 6 months from second/third shot. So that's a problem for you, unless you have had Covid as well. A positive covid test plus 1 vaccine is also considered "vaccinated". Looks like no antibody tests qualify anymore.
The rules are complicated and change but look at amudim.org and chaimvchessed.com - they have all the details and you can also write to them and they are very helpful. Hatzlacha!

I’ve also been wondering- if we have up to date vaccinations and a close relative there, can we bring our 8 year old who isn’t vaccinated?

I wish. I have the same situation. 
Unless you or your husband or child are Israeli, no go. Unless you have a positive covid test for her, they were letting that at one point.
