I just took mine out of the oven, and it is yummy. I don't use brown sugar, so I just doubled the regular sugar. And I did add some ground walnuts. I also let it bake longer than the rec. 40 minutes. Thanks redhot for the recipe. My kids were getting kind of bored of the brownies.

I think vanilla should be ok to skip, but it may be a bit flat without baking powder, unless it is a sponge recipe.

I could've sworn I answered this post Erev YT , could be I was dreaming
Anyway, I poured on the crumbs after the first 20 minutes and the whole middle sunk in I should've baked it more like 40 minutes before adding the crumbs, the corners were good , though

I bought brown sugar but no vanilla or baking powder. my grocery doens't even have pesach baking powdeer.
I'll let ya know how it came out !!!!!!

Here are two recipes - both gebrokts
PESACH FAIRY CAKES
5 oz / 150g soft margarine
6 oz / 175gcaster sugar
3 eggs
4.1/2 oz /140g potato flour
1.1/2 oz / 40g cake matzah meal
1.1/2 teaspoons baking powder
1 teaspoon vanilla extract (I never use)
1. Preheat oven to 200 degreeC, 400 degree F. Arrange 20 paper cases in bun tins or on flat baking trays.
2. Put all the ingredients in a bowl and beat by hand or machine until a smooth batter is formed.
3. Half-fill the paper cases with the mixture
4. Bake for 15-20 minutes or until golden brown. Cool on a wire tray
You can omit vanilla and instead stir in the grated rind of 1 lemon.
You can also add chocolate chips or some cocoa into if you like.
BROWNIES
8 fluid oz oil (227ml)
12 oz caster sugar (360g)
6 large eggs
4oz fine matzah meal (120g)
2 oz cocoa (60g)
4 oz ground hazelnuts (120g)
juice of 1 lemon
1. Beat eggs and oil
2. Add sugar beat until thick
3. Add other ingredients
4. Bake 180c 35 minutes
5. Makes two trays

Hi. It's my first post on imamother. Anyway, how about a candy, like almond or pecan brittle? It's probably easier to make than a cake.
Also, a few months ago, I looked at recipes for old-fashioned candies - online, I found two that don't have cream of tartar - a hazelnut taffy, hickory nut taffy/toffee. I don't know about cream of tartar for Pesach - I don't use it, so I don't know whether you can find it with a Pesach hashgacha. Also, there's a grape juice toffee that has only a pinch of c.of t., although it has butter in it. The idea of a taffy-pull sounds like it was something that kids could have fun working on and being busy with for a while. If anyone finds a very basic Pesach recipe for salt water taffy, please share it. Most have corn syrup. Has anyone found a Pesachdik substitute for corn syrup?

double this recipe for 9 x 13
otherwise, 8-inch square
WARNING: Tastes good
3 medium carrots
1 1/4 cups potato starch
1 3/4cups granulated sugar
1 tbsp vanilla sugar
1/4 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp coffee granules
1/4 tsp cinnamon
5 tbsp applesauce or pureed banana
1/2 cup oil
1/4 cup orange juice
shred carrots
measure 1 1/4 cups lightly packed, set aside
place potato starch, sugars, cocoa, bp, coffee, cinnamon in bowl - mix well, add apple sauce, oil, orange juice
[missing the rest of the instructions but basically mix everything somehow]
bake at 190 C/375 F
30 to 40 minutes for 8 inch square
40-50 mins for 9 x 13
check with toothpick for readiness
glaze after cooling with:
1/2 cup granulated sugar
1/4 cup water
2 tbsp cocoa 1 tsp coffee granules dissolved in 1 teaspoon hot water
2 tbsp oil
in a small saucepan, cmbine sugar and water or wine and stir to combine
bring to boil over high heat
reduce heat to low and simmaer for five minsm, until clear and syrupy
cool completely
in a cup, mix cocoa, coffee and oil until smooth
combine with cooled syrup and stir until well mixed
drizzle over cupcakes or cake and allow to set

I make it without the vanilla and baking powder. I think it is fine. (It might be better with, but we really like it in my house.)

Not sure if this is the right crumb cake recipe but it's my most popular pesach cake and my kids gobble it up.
Crumb Cake
non sitck cooking spray
1 C. Sugar
1 C. Brown Sugar
1 tsp. Baking Powder
1 Tbsp. Vanilla Sugar
1 C. Veg. Oil
4 Large Eggs
1 C. Potato Starch
Crumb Topping
2 tsp. Ground Cinnamon
4 Tbsp. Margarine cut into small peices ( 1/2 stick)
1/2 (8 oz) Box Ladyfingers crushed and crumbled
1/4 C. Brown Sugar
1/4 C. Sugar
Preheat oven to 350
Spray 9X13 baking pan with nonstick spray, set aside
In mixer at medium speed mix sugar, br. sugar, baking powder, vanilla sugar, oil eggs, and potato starch until you have a smooth batter.
Pour into prepared pan and bake uncovered for 20 min.
In a med. bowl toss cinnamon, margarine, crushed ladyfingers, brown sugar and sugar. Use your fingers to pinch into coarse crumbs.
Sprinkle the crumbs on top of cake and return to oven for an additional 35 min.
Note: I dump all the crumb topping ing. into a ziploc bag and let my kids smoosh it up for me, no need to use another bowl and it crumbles up much better this way.

Mine came out very strange, I didn't add baking powder but did add vanilla. I don't know what I did wrong aside for that..
