I remember the soup that Bais Yaakov of BP served for lunch in the 80s, was terrific.
They had an orange/red colored vegetable soup and a green colored vegetable soup.
Does anyone make a soup that tastes similar, and is healthy and easy?
Im looking for healthy, not loaded w sodium etc.

Vegetable Soup
3 tablespoons olive oil
1 large onion diced
4 celery stalks sliced
4 large carrots sliced
1 tablespoon salt
black pepper to taste
4 yukon potatoes diced
3 garlic cloves minced
5 cups water
1-2 bay leaves
Heat the olive oil in a large pot over medium heat. Add the onions, celery and carrots to the pot. Season with salt and pepper. Cook, stirring occasionally until vegetables start to soften, about 5-7 minutes.
Stir in the chopped potatoes and garlic and cook until fragrant, about 1 minute. Add the water and bay leaves. Bring mixture to a boil, then simmer until the vegetables soften, about 25 minutes.
Remove bay leaves; use an immersion blender to lightly blend the soup so it’s thicker but still chunky. You can remove some of the vegetables aside to stir back in if you prefer to have more whole vegetables.
Serve with fresh parsley/dill and crusty bread, if desired.

Wow lol I had that soup in the 90’s but was just reminiscing about how delicious it was with a slice of fresh rye bread to dip… the only thing I can remember for sure is that it must have had fresh dill in it. Wish I could get my hands on the recipe!
