( or more than parboiled) a couple days ago. Can they be frozen? Should I make into mashed potatoes after shabbos and freeze? In a time crunch and don’t want them to go to wasre

I find the only way that mashed potatoes freeze well is if they are very fattening which is the opposite of healthy cooking lol.

Once they're parboiled, you can make them crispy on the outside with oven roasting while soft on the inside. Use as a shabbos side dish.
