I'm not going to revive and old thread. Question for pineapple kugel makers (the recipes with flour, not noodles). Have you ever tried using honey? And white whole wheat flour? Thanks!

I have a recipe with crushed pineapples, it has more of a creamy consistency.
It's rather sweet, so if you're trying to covert it to healthy I recommend cutting the sugar. Not sure how honey will work because I don't know if it can do with more liquid in the recipe.
Regarding flour, I use white whole wheat all the time instead of white so I may be immune to the difference by now.
4 eggs
½ c oil
1 tsp vanilla
½ cup sugar
½ cup flour
1 can pineapple junks with the juice
Beat eggs & oil. Add remaining ingredients. Pour into 2 pie crusts. Bake at 350⁰ for 30-40 minutes.

I've made it with coconut oil, maple syrup and half almond flour half reg flour. It was actually really good. Only those that don't like coconut didn't like it because of the flavor the oil gave it.

The recipes I've seen here are variations of the theme. Some have the juice, some not. Some have 1 tsp. baking powder, some too. And Chocolate Moose has one with butternut squash.

White whole wheat flour shouldn't be a biggie. I'm more concerned about the honey.

I use white whole wheat flour and it works great. I don’t think honey would work but like others said, I would just decrease the sugar. Pineapple is sweet enough!
I also replace half of the oil with unsweetened applesauce.

I used maple syrup instead of sugar which is a bit more liquidy than honey and it was fine. If you're worried then maybe decrease a bit the oil or increase a bit the flour.
The recipe I use calls for crushed pineapple so it's not a cakey fluffy type. Can't go wrong.
