Flying low-cost through Europe - what food to take along?

I’m going to be flying to Europe from Israel soon on a low cost flight with a four hour stopover in Bulgaria - so basically no access to kosher food until I land in my destination.
What would you take with you as far as nourishment if you were in my situation? I’m only traveling with a backpack, so can’t schlepp that much with me.
Also if you’ve been to the Sofia airport and have an useful tips us like to know.

Tuna and salmon packets, nuts, dried fruit, whole grain crackers and peanut butter in individual packets. Buy fresh fruit in airport.
