It's not exactly an attractive looking food. A bed of lettuce might help.
I rarely plate food, and normally just prepare a tray.

You can either do a platter with greens on the bottom and slices going down the center or individual plates. I like to do individual plates with one slice of plain gefilte and one slice of salmon gefilte. Garnish with lettuce or dill on the plate under the slices. If you're feeling really fancy, cut a thick slice of cucumber for each plate and scoop out some of the center. Fill with mayo dill sauce. Take another hollowed cucumber slice and fill with red chrain. You can top each piece with a carrot slice and put a lemon wedge on the side. If you want to do a platter, alternate salmon and regular slices and put the cucumber slices with sauces (alternating dill sauce and chrain) around the edge of the platter.

I've seen tasting spoons ( look at fancy party goods) filled with chrain and other dips served directly on the plate with the gefilte fish.

The classic: on a bed of lettuce with a carrot slice in the center. You can get fancy and make a flower using the carrot as the flower and parsley sprigs as the stem and leaves if you like that kind of patchkerei.

Sprinkle dried parsley to fill plate and give color.
Use 2 color sauces. Like salad mates lemon garlic and a mainaisey loose Chrain. Drizzle on plate. Or make drops. Or sweep. Like make stripes down middle of plate - drag with knife.
Cherry tomato sliced in half, thin cucumber slices.
Cut fish thin and put 2 slices overlapping on plate.
Small bunch of sprouts

Slice the fish neatly. Put some lettuce on the plate and place the fish neatly over it. Put carrot slice in the centre of the slice. You can cut the carrot into a flower shape to make it look prettier, or you can do the thing where you push the carrot through the fish before cooking it.
I've also seen where you have on the plate 2 wedges of cucumber that is hollowed out, one with mayo in and one with chrain.
I personally like to have a platter as I don't like plating anything but that's a personal preference.

For a simcha I did. At home I’ll do the parsley, sauces, veggies or sprouts. If I want to be fancy.
