What can I fill Vegetable Blintzes with?

Any suggestions would be appreciated. Can I chop "Oriental Blend" frozen veg. and sautee it with onions? Would putting in some mashed potatos with the Blend and onions, make it better or worse as a filling for blintzes?

Any other ideas?

Frozen Oriental blend may have corn, snow peas, regular peas and/or green beans - all of which are Kitniyot. They may also have mung bean sprouts which I'm fairly sure are also Kitniyot.

You might be better off buying a cole slaw mix and using that with a grated onion thrown in for good measure.

They have broccoli, carrots and water chestnuts. Are water chestnuts Kitniyos? I don't think so. Would a Chassidishe Hechsher (Golden Flow vegetables) give a Pesach Hechsher on items with Kitniyos?

I would sautee onions and add in carrots and squashand cabbage maybe, spice it and thats all

I would make like an eggroll mixture. fried onions and cabbage. u can add mashed potatoes too.

So, I notice this about a year later, c u t e. Very Happy

½ cup Shredded cabbage
½ cup Grated carrots
½ cup Finely sliced green pepper
¾ cup Diced onions
3 tablespoons Butter or oil
1 teaspoon Salt
1 dash Cayenne pepper


Cook the cabbage, carrots, green pepper and onions in the butter or oil for 10 minutes, stirring occasionally. Season with the salt and cayenne. Fill the pancakes. I know it's early to post Pesach recipes, but I was browsing the Pesach section and noticed this thread, and have a good idea for op, so I'm posting now.

We take the vegetables from the chicken soup (carrots, knob celery, parsley root, squash, whatever you like) and mash well. We add to that eggs, a little potato starch or mashed potato to 'hold' it, and spices and mix it well. We then fill the crepes with it. It is HEAVENLY! It feels good to not throw out those vegetables and it's economical too. I sometimes make celery or mushroom sauce to go on top.

Mushrooms. There's filling recipe in Tamar Ansh's Taste of Tradition (I think it's hers)...non gebrokts/GF. I think it's mushrooms, leeks, and potato starch.

I saute a bag of cabbage with some salt and a drop of sugar and then I add the cooked chicken from the chicken soup. saute until soft and let cool. Use that for the filling of the blintzes. It is delicious and it can be an appetizer or a side dish. I sometimes serve it with a Pesach duck sauce. Let me know if you want that recipe.

11 years later, yes Id love this recipe and any other recipe for fillings for Vegetable Blintzes. I dont use mushrooms on Pesach.
