Use it instead of cornstarch during the year. it's more nutritious.

I found it to be quite good, though my kids say it tastes more like apples with sugar cookie crust than pie.

make pancakes, sponge cakes, use it as a coating for schnitzle etc.

mimi, I use it to thicken sauces. I mix Osem onion soup powder, mush soup powder, pepper, salt, water, a little red wine or cooking wine and then mix in some pot starch (blended in some cold water first). I cook chicken or meat and veggies (and lots of whole garlic cloves) in this sauce. It thickens nicely while baking. So yummy!
I make this sauce Pesach and for almost every Shabbos night meal as DH loves it. Sorry I don't have proportions to give you - I just do it all by rote at this point.
You can also use it year round to thicken any mixture - egg mixture for quiche, milchig alfredo sauce, etc...
